From the Carballocobo vineyard, the grapes are fermented using the whole cluster, with no destemming, having been crushed by foot, before a month long cold-maceration. The wine’s aged in old oak for about 18 months. There’s cherry and spice on the nose, with even more savoury notes on the palate - balsamic, chocolate, spice and leather. Crunchy texture to start that develops into a silky smooth, minerally finish. A delicious example of less is very definitively more when it comes to wine making.
