Alta Alella 'Mirgin Opus' Cava De Paraje, Spain, 2019
Grape: 60% Chardonnay and 40% Pansa Blanca
Cava de Paraje Calificado is Cava’s newest and highest classification and is the equivalent to a Grand Cru -it is awarded to the finest wines from the very best sites.
The Mirgin Opus comes from the Paratge Vallcirera-Serra de Mar, which is where Alta Alella lies. The soils are Sailó, so acidic, rough granite sand. The Chardonnay is fermented in two year old French oak barrels, while the Pansa Blanca is fermented in stainless steel. 2019 was an excellent year with very healthy grapes giving ripe white fruits and flowers on the nose, with seaside salinity. The white fruits follows through, some nut flavors. Lovely, balanced, acidity and a depth and long length, from the 3 years of aging, makes for a world class sparkling wine.
Brilliant as an aperitif and delicious with seafood or a roast chicken sandwich!
