Jonathan Didier Pabiot ‘Eurythmie’ Pouilly Fumé, Loire Valley, France 2018
This stunning! From 50 to 60 year old vines grown on Kimmeridgian marls and flint terroir. Hand picked and aged in demi-muids (large 500 litre old oak vats) and barrels for 12 months and then a further 6 in stainless steel. There's incredible depth here, complexity and reward. Think white stone fruits, lemons and apples, with hints of honey, butter and a touch of cream. Then think of a generous pinch of salt that gives a mineral vein to carry the glorious depth of flavour for a long, lovely finish.
Pairs well with white meat, seafood and, in particular, lobster.
