Vilmart Grand Cellier d’Or Premier Cru 2017
80% Chardonnay and 20% Pinot Noir
There’s a pronounced golden hue with very fine and persistent bubbles. There are beautiful aromas on the nose, it’s textured and mature yet very elegant, airy and floral. There’s melted butter, custard, candied pineapple, cardamom and with pepper to start. Then, nuts aromas at first (pralines, hazelnut) followed by mineral notes (chalk, roasted shellfish). The wine is mature and complex with a lot of personality. It still evolves in the glass with cinnamon and gingerbread aromas. This is crisp, refreshing but still textured, with balanced oak. The finish is very long, over seconds, and clean. Backed up by candied lemon, candied orange zest and, as it opens up, the pralines reappear, balanced by peaches and apricot notes. This wine hardly needs food but it pairs beautifully with oysters, smoked salmon and caviar.
