Jonathan Didier Pabiot ‘Utopia’ Pouilly Fumé, Loire Valley, France 2018
This is Jonathan's 'natural' wine, his Utopia, from his Les Marnes plot, on Kimmeridgian soils, of 60 year old vines. Hand ploughed, hand harvested and hand made, he ages this wine in 10 to 15 year old barrels for 12 months and then allows it to settle in stainless steel tanks for another 6 months. There's skin contact and it's left on its lees and that seems to be it when it comes to Jonathan's 'intervention'.
Slightly oxidative on the nose to start, then it opens up with warm spices, candied quince. It's full in the mouth, with saline backbone that's a touch iodized.
Pairs well with white meat, seafood and in particular, lobster.
