Vilmart, Blanc de Blanc, is one of the truly great Champagnes. This Blanc de Blancs has serious structure with liner minerality and Vilmart’s hallmark finesse. On the nose there’s all our favourite citrus fruits, followed by hints of toasted hazelnuts and vanilla. The vanilla and hazelnut notes continue on the pallet and complimented by “apricot, ripe pear and honeysuckle” notes. It’s a serious wine with a silky mouth feel and a delicious mineral core. A phenomenal aperitif and even better with food, especially with scallops, oysters, caviar and, of course, artisan chocolate.
