The Blanc de Blancs comes from a single plot ('Les Blanches Voies) of sixty year old vines, it's Vilmart's most important parcel of Chardonnay. There's serious structure with liner minerality and Vilmart’s hallmark finesse. On the nose there’s all our favourite citrus fruits, followed by hints of roasted hazelnuts and vanilla. The hazelnut notes continue on the pallet, complimented with hints of brioche and vanilla, plus “apricot, ripe pear and honeysuckle” notes. It’s a serious wine with a silky mouth feel and a delicious mineral core. A phenomenal aperitif and even better with food, especially with scallops, oysters and, of course, caviar. Exceptional!
