The El Palomar (Dovecote) grapes were planted circa 1850 and are ungrafted pre-phyloxera. It’s the oldest of the 40 small parcels that Zarate farms and one of the oldest vineyards in Rias Bias. The El Palomar is the only one of their whites that sees any wood being fermented in 2200 litre, 15 year old, oak foudre, that gives a more lushish mouthfeel while retaining the family’s signature salty minerality. There’s a seriousness to this wine, due to the incredible age of the vines, with striking complexity and depth.
Pairs well with white meat, seafood and in particular, shellfish.
