Alta Alella 'Exeo' Cava De Paraje, Spain, 2015
Grape: 60% Pansa Blanca and 40% Chardonnay
Cava de Paraje Calificado is Cava’s newest and highest classification and is the equivalent to a Grand Cru -it is only awarded to the finest wines from the very best sites. The wines of Alta Alella display finesse and complexity to rival- and even surpass- many top-end Champagnes.The Mirgin Exeo comes from the Paratge Vallcirera-Serra de Mar, which is where Alta Alella lies. The soils are Sailó, so acidic, rough granite sand. Produced only in exceptional years the Exeo is macerated and fermented in 2 and 3 year old barrels and is then aged for over 5 years before being released.
There’s a nice level of toasty aromas plus floral and ripe fruits. It’s creamy with distinct minerality, balanced with the ripe fruits and toast flavors. This is an excellent example of Cava.
