Organic

Hand-harvested in mid-September, the wine undergoes a cool fermentation for about 15 days, followed by aging in stainless steel for the following 8 months before bottling. A crisp, elegant wine, with green apple and mineral notes, and touch of herbal bitterness on the finish.

Pairs well with: Gilled fish, roast lamb and pork
